Butternut Layer Cake

1 c. cooking oil
2 c. sugar
4 eggs
2 1/2 c. flour
1/2 c. self rising flour
1 c. milk
1 Tb. butternut flavoring*
Frosting:
1 box powdered sugar, sifted
1/2 c. margarine, softened
8 oz. cream cheese, softened
1 Tb. butternut flavoring
1 c. pecans
*2 tsps. butter flavoring, 1/2 tsp. almond flavoring & 1/2 tsp. vanilla flavoring will substitute for butternut flavoring

Preheat oven to 350. In large mixing bowl, blend oil & sugar. Add eggs & beat with mixer on high for 6 minutes. Add flours, milk & flavoring
mix on medium speed, scraping down sides of bowl as needed. Pour into 3 greased & floured 9" cake pans. Bake 20-25 mins or til done. Remove from pans, invert on racks & thoroughly cool before frosting. Frosting: In large mixing bowl, put sugar, butter, cream cheese & flavoring. Mix on low speed for 1 minute, til sugar is thoroughly blended. Mix at med high speed for 2-3 minutes or til frosting is fluffy & spreadable. Stir in pecans. Spred on thoroughly cooled cake layers.
