Baked Orange French Toast

Nonstick cooking spray
1 loaf day-old wide Italian bread, cut into 1" slices
1/2 c evaporated skim milk
4 egg whites
2 eggs
3 T thawed frozen orange juice concentrate
1 1/2 t grated orange zest
1 1/2 t vanilla
1/4 t ground nutmeg

Preheat oven to 325. Spray a large shallow baking pan with cooking spray. Arrange bread in the pan in a single layer. In a medium bolw, whisk together the remaining ingredients. Pour over bread & turn to coat. Let stand 30 mins, or chill until ready to use. Turn slices again to soak up egg mixture. Bake bread 10 mins
turn slices, bake 10 mins longer or til golden. Serve at once. Serves 4. 323 cal., 5g fat, 110mg chol, 551mg sod
