1 box yellow cake mix
1/4 pound butter
1 cup chopped pecans
1 egg
8 ounces cream cheese, softened
2 eggs, slightly beaten
1 pound package confectioners' sugar
From the Blue Willow Inn, Madison, Georgia Combine cake mix, butter, pecans, 1 egg. Stir by hand and mix well. Press into ungreased 8 x 11 baking pan. Use ice water chilled hands. Combine cream cheese and remaining 2 eggs. Add sugar and mix. Mixture should be slightly lumpy. Spoon over cake mixture and spread evenly. Bake 35 to 40 minutes in preheated 350 oven until golden brown. Cool 1 hour and cut into squares. 412 cal, 20g fat, 56mg chol.
