1 lb. package egg roll wrappers
1/2 lb. feta cheese
Dried mint
Red pepper
Egg white to seal pastry
Oil for frying
Cut 7 egg roll wrappers into strips about 2" wide. Lay out 5 or more pieces in a row on work surface. At one end of each strip, place generous chunk of cheese, about 1 rounded Tb. Sprinkle generously with mint & a bit of pepper. Fold pastry as if it were a flag: make a diagonal fold to form a triangle, then fold straight up
then make another diagonal fold in the opposite direction onto the end of the strip. Seal the end with a bit of egg white. Repeat until all the cheese is used. Deep fry & serve. Both unused dough & uncooked cheese pies can be frozen.
